The Belize Collection Food Truck Makes Its Debut
For years now, guests of The Belize Collection have been able to enjoy a variety of the country’s culinary delights in breathtaking settings thanks to our signature restaurants. Now, we’re bringing all those beloved flavors to the streets of Belize with the launch of our new food truck.
Conceptualized by Managing Partner Ian Lizarraga, The Belize Collection food truck is bringing something new to Belize’s blossoming mobile dining scene. It’s sleek. It’s stylish. And it’s not your average food truck. With a modern, minimalistic design, including a full black exterior, the food truck is serving up an elevated mobile dining experience in many ways.
A spacious rooftop deck, high-end equipment, and an interior with 30’ x 30’ operational space all ensure that patrons can enjoy The Belize Collection’s excellence that they would at any of our restaurants. The same holds true when it comes to the food.
From crispy lobster bites at Lobster Fest to pork belly mac and cheese at the National Agriculture and Trade Show, our truck presents foodies with the chance to enjoy some truly creative flavors with a familiar Belizean flair—all under the direction of Executive Chef Rahim Melendez.

We’ve been on the road for over a month now, serving up the signature cuisine that our brand has become known for at major events across Belize. Where will we be heading next? Past And Upcoming Events
Attendees of the Belize Songwriter Festival at the Lodge at Jaguar Reef were among the first to enjoy the new Belize Collection food truck experience. There, music lovers were treated to delicious eats while they enjoyed the musical stylings of some of country music’s top songwriters.
Shortly after that, the truck made its debut at the National Agriculture & Trade Show in Belmopan and the Belmopan Night Market. It was warmly received by shoppers and showgoers at both events. We’re beyond happy to share that we sold out at the Belmopan Night Market!
At the Placencia Lobster Fest, both locals and visitors had the chance to enjoy a curated menu of bite-sized treats. Lobster mac & cheese, popcorn chicken, and crispy lobster bites were all crowd favorites.
Those who missed us in Placencia were able to get a taste of all things The Belize Collection at our annual Mini Lobster Fest & Artisan Market at The Lodge at Jaguar Reef. It took place on July 19th, and the food was delicious as the venue was energetic.
Recently, we also had the privilege of providing catering for The Belize Zoo’s annual Wild Tales Dinner. Guests were able to enjoy a wide range of dishes, each inspired by Belize’s wildlife and natural landscapes, in the form of a three-course dinner. It’s a service that we are excited to begin offering for family celebrations, staff retreats, weddings, conferences, and more in the near future.
The Belize Collection food truck will be making its round at Belmopan Day on August 2nd. Beyond that, there will be plenty more opportunities to enjoy a unique Belize street food experience with us. That includes the Belmopan Cultural and Culinary Fest (September 5th & 6th), the Expo Belize Marketplace in Belize City (September 13th & 14th), the Belmopan Food Festival (September 21st), and the Belmopan Night Market, which takes place at the end of every month.
